Slow Cooked Monkfish pearl onion confit, wilted spinach

Hard to go wrong with slow roasted anything - kind of like deep fried - but for the healthy folks. And those pearl onions! WOW.

Amish Chicken Leg Roulade spring vegetable, sauce albufera

Amazingly tender and flavorful. Some of the best mashed potatoes I've had in a long while...

Le Dessert

Milk Chocolate Mousse

What's not to like with chocolate mousse. nice granola type crunch for contrast in mouthfeel. Golden raisins weren't needed (IMHO), but not bad.
